Chef Toby grew up learning the traditions of Korean cooking from his mother and grandmother. Join him in the BSC kitchen as he shares a menu that reflects his heritage and what he likes best, including, Korean BBQ or Samgyeopsal Gui, which is grilled pork belly lettuce wraps with Pajeori, green onion salad and Ssamjang, a spicy sauce. Other dishes include Doenjang-jjigae, Korean miso stew with shrimp and tofu, Maeun Ttukbaegi Gyeranjjim, spicy and savory egg steamed in an earthenware bowl, Baeshu Geotjeori, fresh Napa cabbage kimchi, Kongnamul-Muchim, a soybean sprout side dish, and Steamed Rice. If you’ve ever thought you’d like to learn the secrets of slow cooking on the grill and smoking your own food at home, now is your chance! Lance and Chris, owners of Marv’s Catering, return to BSC to demonstrate the process with an enticing menu that begins with an appetizer of Cajun Jumbo Shrimp. They’ll demonstrate their techniques on their large commercial smoker, cooking up St. Louis Style Ribs, and Best Barbecue Salmon with Texas Spuds and Marv’s Coleslaw as the delicious sides. BSC is excited to welcome 2 Towns Ciderhouse, Oregon’s largest craft cider producer and creator of an amazing variety of incredible hard cider! Join representative Tim Frink for an informative evening learning about their successful cidery and taste five of their varietals paired with complementary courses. Paula and Leanne’s menu begins with Pacific Pineapple BBQ Chicken Wings paired with Pacific Pineapple Cider, and Mixed Greens-Herb Salad with Peppered Goat Cheese and Blackberry Vinaigrette served with Made Marion Blackberry Cider. Sweet Potato and Apple Soup is perfect with Hollow Jack, a caramelized pumpkin, sweet potato, apple cider with a hint of spice. For the main course, Slow-Cooked Pork Shoulder with Roasted Apples and Cider Gravy accompanied by Leek, Artichoke and Emmentaler Cheese Bread Pudding, stands up nicely to The Bad Apple, a big and bold favorite. For dessert, a Pear and Hazelnut Cake with Pommeau Drizzle is served with Pommeau, made from locally grown traditional bittersweet cider apples, aged with apple brandy, then matured in French oak barrels for one year that results in a complex port-like apple wine. If you enjoy hard cider that’s not too sweet and flavors shine through, you won’t want to miss this event!
